Al vele eeuwen in cultuur en uitgroeiend tot forse boom van circa 30 m hoogte. De vrijwel ronde kroon is opgebouwd uit zware takken. De oude stam is lichtgrijs met diepe, onregelmatige verticale groeven. Het oneven geveerde blad wordt 20 - 30 cm lang en heeft 2 - 4 (6) jukken. De deelblaadjes zijn eirond tot ovaal, circa 8 - 12 cm. Ná de bladontwikkeling verschijnen de groene, mannelijke katjes (circa 7 cm) en de kleinere vrouwelijke bloemen die in groepjes van 2 of 3 bijeen staan. De groene, bijna ronde, vrucht heeft een gladde bolster die in het begin nog kort, klierachtig behaard is. De lichtbruine noot is gegroefd. Bijzonder smakelijk. Noten verschijnen pas bij circa 15 jarige exemplaren. Wortelt zeer diep en heeft liefst goed doorwortelbare, open grond. Belangrijke houtproducent.
